We are blessed with some truly wonderful produce in the North Highlands. We aim to take advantage of this (and keep our food miles down) by sourcing our ingredients as locally as possible.
We keep an organic kitchen garden for vegetables, herbs and fruit; keep our own hens and make our own jams, chutneys, bread, biscuits and cakes. The shortbread in your room and the shortbread or cakes that we serve in the afternoon are always homemade. We source a large proportion of our other food from local suppliers. The list below gives the origin of the local, regional and Scottish produce that we use in our breakfasts and light suppers.
